Let steak sit for 5-10 mins after removing from fridge to reach room temperature, this helps prevent sticking to the grill.
Take steak off the grill 5 degrees prior to desired temperature. It continues to cook while resting so this helps prevent over-cooking.
Let steak rest for 3-4 mins after removing from grill to allow heat to release.
Forking the meat a good amount on each side to create channels for marinade is key.
Marinade is recommended 1.5 hrs on each side, however, longer will provide more flavor. Filets require longer marinade time because the meat has less fat to absorb marinade.
Overnight marinade is also good if possible, planning wins.
Marinaded steak used in tacos is amazing and is frequently requested at our house.
You can make a reduction sauce of the marinade if you save it after placing steaks on grill, if a reduction is your thing.
